Elephant Garlic is not a true garlic, but a member of the leek family. Even so, it has a distinctly garlicy flavor with none of the overwhelming spice that true garlic can bring. The bulbs are far larger than normal varieties of garlic, and are very easy to peel and work with. Its mild flavor makes it an excellent choice for using raw, though it becomes sweet when roasted. The best yields come from planting in the early fall so they can enjoy a long, cool period of growing.
